Our Favorite Gluten Free Waffle Recipe

Jim stopped eating gluten years ago, since he could see and feel his health being challenged every day.  Chronic conditions such as migraines, sinus infections, troubling skin conditions, and many more signs pointed him to make a major change in his diet. 

I do most of the baking in the family and want to treat him to the things he misses.  We have found recipes for most of them, but somehow a good waffle eluded us.  National Waffle Day is March 25 (this Saturday!) and we recently found a waffle recipe that we are SO in love with!  It's tasty, fluffy, and gets that yummy crisp exterior.  I have no reason to make wheat waffles again!  I hope you love it, too!  Click here for the original post.

Basic Gluten Free Belgium Waffle Recipe

Serves: 4

Ingredients

  • 1¾ cups Gluten Free All Purpose Flour Blend(I use 1/2 rice flour and 1/2 All-Purpose)

  • 2 teaspoons baking powder

  • 1 teaspoon salt

  • 5 teaspoons granulated sugar

  • ⅛ teaspoon cinnamon (optional)

  • 1½ cups buttermilk (you can substitute 1 1/2 cups warm milk + 2 T vinegar, mix and let stand for 10 minutes)

  • ¼ cup vegetable oil

  • 1 teaspoon vanilla extract

  • 2 eggs, beaten

  • butter, fruit and/or syrup for topping (optional)

Instructions

  1. Heat waffle iron

  2. Whisk the ingredients together in a large mixing bowl

  3. Let batter rest for 15 minutes

  4. Make waffles according to your waffle makers directions

  5. Top with your favorite fruit, butter and/or syrup and enjoy!
